Exercise Eating Eggs Employment Emotional Exhaustion Etc.

Life Style Challenge Week 4 Review:

(1)  No bread, no pasta, no rice
(2)  Exercise for 30 minutes, 3 days a week (T, Th, Sat)--25 min cardio, 5 min strength
(3)  Make new paleo "carb substitute" recipe
(4)  Average 3 or fewer Triscuits per day

I met my goals last week, though man, that "sponge bread" (i.e., eggs adulterated with coconut flour, vanilla, baking soda, and sliced almonds on top) was GROSS.  It was like the world's blandest, greenish blue souffle, which somehow managed to taste really bad, too--it had almost no flavor but that little bit of flavor?  Terrible.  Instantly trashed.  Lesson learned: you cannot make a bread substance from a mixture that is like 90% egg.  

Life Style Challenge Week 5:

(1)  No bread, no pasta, no rice

(3)  Complete doctor and dentist appointments
(4)  Average 3 or fewer Triscuits per day

I'm taking it a bit easy on myself this week, repeating 3 of last week's goals and substituting some doctor/dentist appointments for cooking.  My doctor appointment is already complete.

The reason for this relatively easy week is that I'm reeling from the sudden bad news received in email this morning at work that we are having layoffs at work and given the details of how the budget cuts from across the organization are going to be absorbed by a limited number of departments including mine...well, it's increasingly difficult for me to figure out the scenario in which I still have a job on July 1.  (I may easily not have a job well before that, of course--I have no idea when the cuts will happen, only that they will happen before the end of our fiscal year.)  So yeah...that sucks.  A lot.  I will leave it at that because I am just too emotionally wrung out to even think about it any more right now.  We did a review of our financial situation tonight, and fortunately, my being laid off would not cause any immediate problems for our ability to pay our bills.  But it sucks all the same.

Use tan sponges instead; they taste better.

Hmm, but one can make a cake-like substance that's basically made of chocolate scrambled eggs (aka flourless chocolate cake).

That's a pretty terrible e-mail message alright. You have my condolences.

C -- The color was like a science experiment gone bad...or right, maybe? But a failure as a cooking experiment. The photo showed a tan substance, so WTF?

Debbie -- Can you vouch for the palatability of the flourless chocolate cake that's mostly eggs? That would be another good thing to try.

Thanks for the sympathy on the sucky work thing, guys. I'll keep you updated.

Yes, flourless chocolate cakes taste really good (even Robin agrees), but as I recall, you are not a big fan of chocolate, and they are very chocolaty. To describe the texture, I'd put them on a continuum with other baked goods in this order: regular chocolate cake -> brownies -> flourless chocolate cake -> cheesecake.
